WATERMELON AND SPICY FETA SKEWERS

THIS is a great simple dish that could run alongside any barbecue - serve it as a starter or as a vegetarian alternative.

Make sure you buy quality feta in blocks and cut the pieces large enough so the skewer doesn't break them.

As a variation, try doing the same recipe without the skewers and serve as a salad along with some baby gem lettuces and cucumber.

WATERMELON AND SPICY FETA SKEWERS

Ingredients (serves 8-10)

½ small watermelon

200g feta cheese

½ teaspoon garam masala

½ teaspoon ground cumin

¼ teaspoon red chilli powder

1 tablespoon extra virgin olive oil

Juice from ½ a lime

Small handful chopped fresh coriander

Sea salt and freshly milled pepper to season

Method

1. Cut the watermelon into bite size chunks, discarding the peel and any obvious seeds.

2. Cut the feta into chunks of a similar size to the watermelon and place in a bowl.

3. Mix the garam masala, cumin, chilli with the oil followed by the lime juice, finally add the coriander, toss the cheese and melon in the spices and season with sea salt and freshly milled pepper.

4. Thread the watermelon and feta chunks onto medium size skewers and serve.
